Glazed Chicken, Sweetcorn, Peas a DELICIOUS traditional Mauritian recipe..
So it has taken me ages to keep updating my blog with recipes lately, so here is one of my favorite quick eats, Mauritian style. This dish my mum used to always make ( I say used to) because she now knows I cook alot of food and therefore doesn’t make it anymore! It’s so easy to make and its great if you haven’t got alot of time to make something tasty for supper, its great with rice or faratas or simply fresh baguette.

Chicken Fricasse Recipe: Serves 4-6
500g Chicken Thighs, skinned, boned, cut into chunks
2 Garlic cloves, finely chopped
1 White Onion, finely chopped
1 inch piece Ginger, finely chopped
2 tbsp Dark Soya Sauce
1/2 cup of Sweetcorn, drained
1/2 cup Peas, frozen or fresh works well
2 tsp of Thyme leaves (fresh or dried)
2 tbsp Olive Oil
1 Tomato, chopped roughly
Optional: Fresh coriander/spring onion to scatter over
Heat oil in a pan and fry onion garlic, ginger, onion till translucent (approx 2-3 mins) add in the thyme leaves.
Add the chicken pieces, stir fry until chicken is lightly browned. Then add in the chopped tomato, stir and add 1/2 cup of water.
Reduce heat, cover and let it cook for 15 minutes or so, then add in the sweetcorn and peas, let this cook for a further 5 minutes (top up with a little water to help cooking if dried out)
Remove from the heat once chicken is tender, sauce has dried a little, then pour over soya sauce, mix well so the chicken is coated in this glazed medium dark coating. Check for taste and seasoning, serve with baguette or white rice. Here I have made it with brown rice, spiced with cinnamon & cardamom pods topped with fried shallots.
