Ok so the other day I made a quick picnic after seeing a cute picnic set at Clas Ohlsen (impulse buy), for four people, decked out with plates, cutlery, napkins and cooling bag attached! You know it’s like when you buy something new and you want to use it straight away.
So here’s three ideas from Jamie Oliver’s latest issue of Jamie Magazine, two great ideas I tweaked slightly and I just added in the third one..
And let’s face it if the weather carries on like this for the rest of the week it would be a perfect time to pack up some homemade goodness and head out to the park with a chilled bottle and some sunshine.
Feta, Pomegranate & Couscous
100g couscous, enough for two people or however many
10g feta cheese
1 tbsp white wine vinegar
2 tbsp chopped tarragon
Honey, just a drizzle
1 pomegranate, seeds
flaked almonds optional
Place couscous in a bowl with enough boiling water to cover it, place a plate on top and leave for 5 minutes.
Remove plate and fluff up with a fork, add a drizzle of honey, olive oil, crumble in your feta, chopped tarragon (which works well with the fish),wine vinegar, pomegranate seeds, as many as you like here.
Mix all well together.
Roasted Sumac Aubergine
1 Aubergine, chopped into cubes
1 tsp cumin
dill, basil optional to season and black pepper!
So simple! Preheat the oven to gas mark 6, in a baking tray, toss the aubergines with the sumac, cumin, pepper and drizzle olive oil. Place in the oven to roast for 20 minutes till soft and cooked through.
Toss through herbs and scatter over the couscous and feta dished made earlier! Great light supper of lunch box treat. Healthy too!
I had some smoked mackerel in the fridge, you can break up into flakes and eat either hot or cold with these dishes as the tarragon goes really well.
In addition I made a courgette and mint salad, grated courgettes with salad leaves dressed with lemon juice, olive oil, chilli flakes, fresh mint leaves. Amazing and fresh, perfect picnic food. With the addition fo the rest of my homemade sourdough loaf
