Chickpea, Tuna & Red Onion Salad

Fresh Chickpea, Tuna, Red Onion, Red Wine Vinegar salad

Want to try something healthy for lunch? I rustled up this quick and super easy recipe yesterday when I had my mum and sister round for an impromptu lunch date.

I have about 5 cans of  tuna in my cupboards at home, just incase you know I have to ration one day, their’s an earthquake or something or I just fancy something simple and easy to make.

There’s no cooking involved really apart from grilling some halloumi to put on top if you fancy( I have an addiction to this at the moment, have you noticed?)

Ingredients

1 Can of Tuna, drained

1 Can of Chickpeas, drained

1/2 a large Red Onion, thinly diced

1 tbsp Olive Oil

1-2 tsp Red Wine Vinegar ( to taste)

A handful of sliced green and black olives (you can buy pre sliced, or pipped and then slice)

Black pepper to taste

Salad Cress, optional

Halloumi slices, optional

Method

Drain your chickpeas and tuna, empty them into a bowl together, give a good mix

Dice your red onion, slice your olives and add to the mixture, drizzle in the olive oil and red wine vinegar

Taste, add more if required, then season with black pepper

You can slice your halloumi and grill till golden brown and mix into the salad. Sprinkle over cress and serve!

A quick tasty lunch, using ingredients lurking in your store cupboard, turned into something delicious!

    Looks great! Would you recomemend another sort of cheese? I love cheese and would like to use it in the salad but I don’t like halloumi. :)
