Autumnal Spiced Porridge

I’ve been eating yogurt and granola for breakfast for a while now.. I need more variety in my breakfast meals, I still want something healthy and not so high in sugar otherwise Il be bouncing off the walls by 11am..So something like porridge gives slow releasing energy, packed with fibre, aids digestion plus stops those mid morning snack attacks!

I still remember the best porridge I had ever tasted (before this one) was in Edinburgh a couple of years back, walking the street market one chilly morning, was an organic porridge van, dishing up ladles of hot, steaming, gooey and creamy porridge.

I had whole hazelnuts and Belgian white chocolate, slightly sinful but the goodness of the oats make up for it!

It was absolutely, positively sumptuous, melted nodules of chocolate, swirled in and the crunch of the hazelnuts just married so well in textures.

I can even close my eyes and remember the taste and warming feel when eating it! Shame I don’t remember where I got it from..

So this morning I pulled out the box of jumbo oats and created something great for breakfast, as we venture into Autumn mornings ( lets not count this morning, I mean its like a heat wave out there). This breakfast recipe, its satisfying, spiced up and comforting..

Ingredients

40 g or 3/4 cup of Jumbo Rolled Oats

195ml or 1 cup of milk ( your choice, cow’s, soya or rice)

1/4 tsp cinnamon

1/2 banana

Drizzle of Light & Mild Honey

Sprinkle of Pumpkin Seeds & Sultanas

Serves 1

Method:

Mix porridge and milk together, cook to packet instructions over the hob or in the microwave

Add cinnamon and gently stir

Chop banana into slices and place on top of porridge, drizzle over honey and sprinkle with seeds & sultanas.

Eat and Enjoy!

Top Tip: Try different sprinkles if you want, raisins, vanilla sugar or chocolate chips, maple syrup for more indulgence. Blueberries, raspberries & strawberries are also great too.

    Yum, it looks scrumptious. I love porridge and one of the things I love about the nights closing in as that porridge comes back on the menu. The best porridge I’ve ever had is my mother’s made with oatmeal (rather than oats) and water and cooked very slowly over night. With a dollop of clotted cream on top, it takes a lot of beating.

    Mind you, I like the sound of white chocolate now you’ve put me in mind of it. I do sometimes melt dark chocolate in when I’m in need of something sweet and chocolatey in a hurry ;-)
